In case you missed the series premiere of Hannibal, you’re not going to want to miss tonight’s brand new episode, “Amuse-Bouche”. And for those who may be wondering about the title, ‘amuse-bouches’ are “different from appetizers in that they are not ordered from a menu by patrons, but, when served, are done so for free and according to the chef’s selection alone. These, often accompanied by a complementing wine, are served both to prepare the guest for the meal and to offer a glimpse into the chef’s approach to the art of cuisine.” Following the pilot, named for a drink preceeding a meal, “Apéritif” was the first taste, while “Amuse-Bouche” is the chef’s sample of what is possible. And when that chef is Hannibal Lecter, one can guess what’s on the menu.

Hannibal 1×02 “Amuse-Bouche” – Will Graham (Hugh Dancy), now an official special investigator with the FBI, helps Jack Crawford (Laurence Fishburne) and the BAU unit search for a murderer who buries his victims alive to grow mushrooms. In their therapy sessions, Hannibal (Mads Mikkelsen) begins to gain Will’s trust as they bond over responsibility for Abigail (guest star Kacey Rohl), and helps Will open up about his true feelings about killing Hobbs. Meanwhile, Freddie Lounds (guest star Lara Jean Chorostecki) snoops around the BAU’s investigation. Caroline Dhavernas and Hettienne Park also star.
Coming in third place last week, Hannibal gave NBC the highest ratings in its timeslot in over a year, according to Entertainment Weekly.
And while there are the naysayers out there, asking if we really need another drama about a serial killer, it’s impossible to deny that Hannibal Lecter is quintessential to this particular genre; like his own refined tastes as a connoisseur (of people), we too should recognize we’re being served something a little greater, a little more refined, with or without the Chianti, when we watch him at work.
